Southern griddle bread
A hoecake is a small, flat cornmeal cake, a Southern American staple originally cooked on the blade of a hoe over an open fire.
The name persists even though modern hoecakes are made in skillets or on griddles: Grandma served hoecakes with butter and molasses.
