turtle soup
Shelled creature stew
Turtle soup is a dish made from the meat of turtles, traditionally sea turtles or snapping turtles, simmered in a rich broth.
Once considered a delicacy in British and American cuisine, it has largely fallen out of favor due to conservation concerns and changing tastes.
Mock turtle soup, made with calf's head, emerged as a cheaper substitute—inspiring the Mock Turtle character in *Alice in Wonderland*.
