fatback

Swine's dorsal layer

Fatback is a layer of fat from a pig's back, used in Southern American cooking to season vegetables, beans, and greens.

Unlike bacon, it comes from higher on the animal and contains little or no meat.

It's typically salt-cured and sliced thin, then rendered to flavor dishes: She added a piece of fatback to the collard greens.
