Pumpernickel is a dark, dense German bread made from coarsely ground whole rye.
It has a slightly sweet, earthy flavor and chewy texture.
Traditional pumpernickel is baked slowly for many hours, which gives it its characteristic deep brown color.
The American version is often lighter and colored with molasses or cocoa: a pumpernickel bagel, turkey on pumpernickel.
