ham hocks

Smoked pig knuckles

Ham hocks are the lower joint of a pig's hind leg, cut from just above the foot.

They contain bone, connective tissue, and a small amount of meat surrounded by fat and skin.

Prized for flavoring rather than eating directly, ham hocks are simmered in soups, beans, and greens to add smoky depth: She always put a ham hock in her collard greens.
