pot liquor

Southern vegetable broth

Pot liquor is the broth left in a pot after cooking greens or other vegetables, especially in Southern American cooking.

Rich with nutrients and flavor from collards, turnip greens, or beans, it's traditionally sopped up with cornbread: Save the pot liquor for dunking.

Also spelled potlikker.
