active dry yeast

Dormant baking granules

Active dry yeast is a form of baker's yeast that has been dried into granules for long shelf life.

Unlike fresh yeast, it must be rehydrated in warm water before use—a step called proofing, which also confirms the yeast is still alive.

Dissolve the active dry yeast in warm water and wait until it foams.
