yeast starter

Fermentation culture base

A yeast starter is a mixture of flour and water that captures wild yeast from the environment, used to leaven bread without commercial yeast.

The starter is fed regularly to keep the yeast active and can be maintained indefinitely: My sourdough starter is three years old.

Also called a sourdough starter or levain.
