sourdough starter
Bread's living base
A sourdough starter is a fermented mixture of flour and water containing wild yeast and bacteria, used to leaven bread instead of commercial yeast.
Bakers maintain starters by regularly feeding them fresh flour and water; some starters have been kept alive for generations.
My sourdough starter is over fifty years old.
