baking powder

Chemical lift agent

Baking powder is a leavening agent used in baking to make doughs and batters rise.

It contains baking soda and an acid that react when moistened, producing carbon dioxide bubbles that create a light, airy texture: Add two teaspoons of baking powder to the flour.

Unlike baking soda alone, it doesn't require an acidic ingredient in the recipe to activate.
