wakame

Japanese soup seaweed

Wakame is an edible seaweed used in Japanese and Korean cuisine, most familiar as the dark green ribbons in miso soup.

It has a mild, slightly sweet flavor and silky texture.

Sold dried, it rehydrates quickly in water: Add a pinch of dried wakame to the broth.

Also common in seaweed salads dressed with sesame oil and rice vinegar.
