agar-agar
Vegan gelatin substitute
Agar-agar is a gelatinous substance derived from seaweed, used as a thickening or setting agent in cooking and laboratory work.
Unlike animal gelatin, it sets at room temperature and remains firm when warm, making it popular in Asian desserts and as a vegetarian alternative: The pudding was set with agar-agar.
Often shortened to agar.
