kombu

Japanese soup kelp

Kombu is an edible kelp used extensively in Japanese cooking, most fundamentally as the base for dashi, the stock underlying miso soup and many other dishes.

The dried seaweed is sold in thick, dark sheets and imparts a savory depth—umami—to broths and simmered foods.

She soaked the kombu before adding the bonito flakes.
