Irish moss

Red algae thickener

Irish moss is a type of red seaweed found on rocky Atlantic coasts, harvested for carrageenan—a gel-like substance used as a thickener in foods, cosmetics, and medicines.

It also appears in traditional remedies and, in Caribbean cooking, in a sweet, creamy beverage: She made Irish moss with condensed milk and nutmeg.
