tomatillos
Green husk fruit
Tomatillos are small, round fruits enclosed in a papery husk, used extensively in Mexican and Central American cooking.
Related to tomatoes but with a distinctly tart, citrusy flavor, they form the base of salsa verde and other green sauces.
The husk must be removed and the slightly sticky surface rinsed before cooking.
Unlike tomatoes, tomatillos are typically used while still green and firm rather than allowed to fully ripen.
