pintos

Speckled Southwestern staples

Pintos are pinto beans—medium-sized legumes mottled with reddish-brown spots on a pale background.

They're a staple of Mexican and Southwestern American cooking, often served whole or mashed as refried beans: rice and pintos, a side of pintos.

A pinto is also a horse or pony with irregular patches of white and another color.
