jaggery

Raw cane block

Jaggery is unrefined sugar made from sugarcane or palm sap, common in South Asian and Southeast Asian cooking.

It comes in blocks or cones with a deep brown color and complex, molasses-like flavor.

Unlike refined sugar, jaggery retains minerals and has a distinctive caramel taste: The recipe calls for jaggery, but you can substitute brown sugar.
