lactic acid

Fermentation's sour product

Lactic acid is a compound produced when muscles metabolize glucose without sufficient oxygen, as during intense exercise.

The resulting buildup causes the burning sensation and fatigue athletes feel: My legs were full of lactic acid by the end of the sprint.

Lactic acid also forms during fermentation, giving yogurt, sauerkraut, and sourdough their characteristic tang.
