chitlins

Soul food dish

Chitlins is a shortened form of chitterlings—the small intestines of a pig, cleaned and cooked as food.

A staple of Southern American cooking and soul food, chitlins require extensive preparation to remove impurities and have a distinctive, pungent smell when cooking: Grandma always made chitlins for New Year's Day.
