Texas chili
Lone Star bowl
Texas chili is a beef-based stew seasoned heavily with dried chiles and cumin, distinguished from other regional styles by what it excludes: no beans, no tomatoes, no ground meat.
Purists use chunks of beef and make their own chile paste.
The dish anchors chili cook-offs throughout the Southwest: Real Texas chili doesn't have beans—that's heresy.
