chitlings

Fried hog guts

Chitlings is an alternate spelling of chitterlings—the small intestines of a pig, cleaned and prepared as food.

The dish has deep roots in Southern American and African American cuisine, traditionally slow-cooked until tender: Grandma's chitlings were always the highlight of the holiday table.

Also spelled chitlins.
