gochujang

Fermented chile paste

Gochujang is a Korean fermented chili paste, thick and deep red, combining heat with sweetness and umami.

It's made from red chili powder, glutinous rice, fermented soybeans, and salt.

Gochujang appears in bibimbap, stews, and marinades, and has become a staple ingredient beyond Korean cooking: I added gochujang to the mayo for the sandwiches.
