balti

Wok-bowl curry

Balti is a style of Pakistani cuisine featuring meat or vegetables cooked in a thin, pressed-steel wok and served in the same vessel.

The dish became hugely popular in British curry houses, particularly in Birmingham, during the 1980s and 1990s: We ordered a chicken balti with naan bread.

The name comes from the Urdu word for bucket, referring to the distinctive serving bowl. (Capitalized Balti refers to the people or language of Baltistan.)
