tajine

Conical lidded cookware

A tajine is a North African stew, typically Moroccan, made with meat, vegetables, and aromatic spices, slow-cooked until tender.

The name comes from the conical clay pot traditionally used to cook it—the lid's shape returns condensation to the dish, braising without added liquid.

Also spelled tagine: We ordered lamb tajine with preserved lemons and olives.
