flash fry
Rapid high-heat cooking
Flash fry is to cook food very quickly in extremely hot oil, typically for just seconds or a few minutes.
The technique creates a crispy exterior while keeping the interior moist or barely cooked: Flash fry the calamari until just golden.
The method works best with small or thin pieces that don't need prolonged cooking.
