spare rib

Barbecue finger food

Spare ribs are a cut of pork from the belly section, consisting of the lower portion of the ribs with meat between and on top of the bones.

They're fattier and meatier than back ribs, typically slow-cooked or barbecued until tender: We smoked spare ribs for six hours.

The name likely comes from the German *rippenspeer* (spear ribs), not from any sense of "spare."
