silverskin
Tough connective tissue
Silverskin is the thin, papery membrane covering certain foods.
On garlic, it's the dry outer layers encasing the bulb and individual cloves.
On meat, it's the tough, silvery connective tissue that doesn't break down during cooking and should be trimmed: Remove the silverskin from the tenderloin before roasting.
Silverskin onions are small white onions used for pickling.
