filet
Strip the bones
Filet is the spelling used for a boneless cut of meat or fish: filet of sole, filet mignon.
It also names a kind of lace with a square mesh.
The spelling fillet covers the same meanings but extends further—to narrow bands or strips, and to architectural moldings.
Both spellings share the verb sense of removing bones from meat or fish.
