rinds

Fruit and cheese

Rinds are the tough outer coverings of certain foods—the skin of citrus fruits, the hard exterior of cheese, the thick shell of melons.

Unlike peels, which suggest something meant to be removed, rinds often carry flavor or protect what's inside during aging: watermelon rind, Parmesan rind, bacon rind.

Some rinds are edible; others are discarded.
