brining

Curing in saltwater

Brining is the process of soaking food, especially meat, in a solution of salt and water before cooking.

The salt penetrates the tissue, seasoning it throughout and helping it retain moisture during cooking: Brining the turkey overnight made it incredibly juicy.

The brine may include sugar, herbs, or spices for additional flavor.
