watermelon rind
Fruit's tough skin
The watermelon rind is the tough outer layer of a watermelon—the green skin and the pale, firm flesh beneath it.
Most people discard it, but it's edible and sometimes pickled or stir-fried: My grandmother made watermelon rind pickles every summer.
The rind is what remains after the sweet red flesh is eaten.
