Stilton

Veined British wedge

Stilton is a rich, crumbly English cheese with blue-green veins of mold running through it.

The flavor is strong and tangy, mellowing with age.

Stilton is traditionally served with port wine or crackers, especially around Christmas: a wedge of Stilton with walnuts.

Only cheese produced in certain English counties can legally bear the name.
