polished rice

Dehulled white grain

Polished rice is white rice that has had its outer bran layer and germ removed through milling, leaving only the starchy endosperm.

This processing gives the grains their characteristic pearly white appearance and extends shelf life, but strips away much of the fiber, vitamins, and minerals found in brown rice.

Polished rice cooks faster and has a milder flavor than its unpolished counterpart, making it the preferred form in most cuisines worldwide.
