black rice

Dark Asian grain

Black rice is a variety of rice with dark purple-black grains, the color coming from anthocyanin pigments in the bran.

It has a nutty, slightly sweet flavor and chewy texture.

Once called "forbidden rice" because it was supposedly reserved for Chinese royalty, it now appears in grain bowls, salads, and as a side dish: The black rice turned the coconut milk purple.
