nigiri
Rice under fish
Nigiri is a style of sushi consisting of a small mound of vinegared rice topped with a slice of raw fish or other seafood, sometimes bound with a thin strip of seaweed.
The topping—typically salmon, tuna, or shrimp—is pressed by hand onto the rice: I ordered two pieces of salmon nigiri.
Distinguished from rolls (maki) and sashimi (fish alone).
