passata

Strained tomato sauce

Passata is uncooked tomato purée, strained to remove seeds and skins.

Italian in origin, it serves as a base for sauces, soups, and stews—smoother than crushed tomatoes but less concentrated than tomato paste.

I used passata instead of canned tomatoes for a silkier marinara.
