Ragù is a slow-cooked Italian meat sauce, typically made with ground or minced meat, tomatoes, wine, and aromatics.
The most famous version is ragù alla bolognese, from Bologna, traditionally served with tagliatelle or used in lasagna.
Unlike marinara, ragù is rich, hearty, and requires hours of simmering: Sunday dinner was pasta with my grandmother's ragù.
