browning

Maillard reaction result

Browning is the process of cooking food until its surface turns brown, typically through exposure to heat.

The technique develops flavor through caramelization or the Maillard reaction: Give the meat a good browning before adding the liquid.

Browning also refers to the discoloration that occurs when cut fruit or vegetables are exposed to air. (Capitalized Browning may refer to the poet, the firearms manufacturer, or a surname.)
