alpha-amylase

Saliva's starch breaker

Alpha-amylase is an enzyme that breaks down starch into simpler sugars.

Found in saliva and pancreatic secretions, it begins carbohydrate digestion in the mouth and continues in the small intestine.

The enzyme is also used industrially in brewing, baking, and textile manufacturing to process starches: Alpha-amylase levels in the blood can indicate pancreatic disorders.
