diastase

Maltose-producing catalyst

Diastase is an enzyme that breaks down starch into sugars.

It occurs naturally in saliva, germinating seeds, and certain molds.

The term was historically important in brewing and baking, where diastase converts grain starches to fermentable sugars: Malted barley contains diastase that activates during mashing.

Now largely replaced by more specific enzyme names like amylase.
