winter squash

Hard-shelled fall gourd

Winter squash is a category of hard-skinned squash harvested in autumn and stored through winter—unlike summer squash, which is eaten fresh.

The thick rind makes it durable but inedible; you eat the dense, sweet flesh inside.

Common varieties include butternut, acorn, spaghetti squash, and pumpkin: I roasted a winter squash with maple glaze.
