kabocha

Green winter squash

Kabocha is a Japanese winter squash with dark green, bumpy skin and sweet, dense orange flesh.

Sometimes called Japanese pumpkin, it has a drier, starchier texture than butternut squash and a flavor often compared to sweet potato or chestnut.

Kabocha is roasted, steamed, or used in soups and tempura: The kabocha was caramelized and nutty after roasting.
