Cream-colored winter squash
Delicata is a variety of winter squash with cream-colored skin marked by green stripes and sweet, tender flesh.
Unlike many winter squashes, its thin skin is edible when cooked.
The oblong shape and size make it easy to slice into rings for roasting: I halved the delicata and stuffed it with rice.
