Cylindrical summer vegetable
Zucchini is a variety of summer squash with dark green skin and mild, slightly watery flesh.
It's harvested young, when tender, and used in everything from stir-fries to baked goods: zucchini bread, grilled zucchini.
The British call it courgette.
Gardeners know it for its prolific yields—a few plants can overwhelm a household.
