sunchokes

Knobby edible roots

Sunchokes are the edible tubers of a species of sunflower, with knobby brown skin and crisp white flesh.

Also called Jerusalem artichokes, though they're unrelated to artichokes and have no connection to Jerusalem.

The flavor is nutty and slightly sweet, similar to water chestnuts.

They can be eaten raw, roasted, or pureed into soup.
