purple carrots
Colorful heirloom vegetables
Purple carrots are carrot varieties with deep violet or purple-pigmented flesh, the original color of carrots before orange varieties were developed in the Netherlands.
The purple comes from anthocyanins, the same compounds that color blueberries and red cabbage.
They taste similar to orange carrots, sometimes slightly sweeter, and are used for visual interest in salads and roasted dishes: The purple carrots added a striking contrast to the plate.
