golden beets
Sunny root vegetables
Golden beets are a variety of beet with yellow or orange flesh instead of the familiar deep red.
They have a milder, sweeter flavor and don't bleed their color onto other foods, making them popular in salads: I roasted some golden beets to go with the goat cheese.
The greens are edible like those of red beets.
