pan-frying

Stovetop shallow cooking

Pan-frying is cooking food in a shallow layer of hot fat or oil in a skillet or frying pan.

Unlike deep-frying, the food isn't submerged—only the bottom touches the oil, so you flip it partway through: Pan-frying gives the chicken a crispy crust without all that grease.

The method works well for breaded cutlets, fish fillets, and vegetables.
