parboiling
Brief preliminary simmering
Parboiling is partially boiling food, usually as a preliminary step before another cooking method.
Vegetables are parboiled before roasting to soften them; rice is parboiled to remove starch or speed later cooking.
The technique ensures even cooking when ingredients have different cooking times: Parboiling the potatoes keeps them from burning on the grill.
