pinyon

Southwestern edible pine

Pinyon (also piñon) is any of several small pines native to the American Southwest that produce edible seeds.

The seeds, called pine nuts or piñones, are harvested from the cones and used in cooking—notably in pesto and Southwestern cuisine.

We gathered pinyon nuts in the foothills.

The trees are characteristic of high desert landscapes, often growing alongside juniper.
